Christmas Conversations: Kip & Co - Hayley Pannekoecke

Christmas Conversations: Kip & Co - Hayley Pannekoecke

Who are you going to be spending Christmas with this year and where?
I will be hosting Christmas this year at our home in Barwon Heads. My plan is for a sunny lunch on the lawn for our family, all 20 of us. Long trestle tables, lots of Kip linen and good times.

Does your family have Christmas traditions? What are they?
Yes! I love a spot of family tradition. We have a few different things we do. The month of December we have a never ending bowl of chocolate coins on the bench for nibbling which the kids and their friends love and are enjoyed while we depend December working through all our favourite christmas movies. Our fave is Elf and The Holiday. It’s also become a tradition of ours to go late November to a local Christmas tree farm with friends and family and select and cut our own tree. I absolutely love the smell of pine. Another thing we do is spend Christmas Eve at Crown in Melbourne so that all the kids can wake up with their cousins on Christmas morning and on Christmas Eve we all tram and walk about the city enjoying the festivities. Our Christmas table is not short of tradition either, with gold coins to be found under the pudding and custard yum!

The main Christmas meal, is this through the day or in the evening? What do you hope will be on the menu?
Christmas lunch is our thing and I’m always looking forward to baked ham, oysters and Christmas pudding with custard.

Is there a recipe you could share?
My fave and I do it every year is baked ham with a honey mustard glaze.
Ingredients
1 large ham on the bone with fat and rind
Cloves
Honey
Dijion mustard
Butter
Salt and pepper
3 garlic cloves
Dark Brown sugar
Orange juice
Method
- pull skin off ham but leave fat
- scour fat with sharp knife to diamond design and dot each with a dried clove
- turn oven to 180 Celsius
- mix in small pot over heat 4 tbsp brown sugar/ 150gm butter/ 3 whole cloves/ juice of 1 orange/ 2 tbsp honey/ pepper and salt / 1 tbsp Dijion mustard. Stir well until melted and combined.
- brush over top of ham
- put ham in oven. Re apply glaze every 10 minutes and bake for 30-40 minutes. Serve warm or cold.

What’s your top pick as a Kip & Co gift this year?

Our Christmas glassware is such a fun present and a great Kriskringle. My number one pick though is our new travel size velvet jewellery boxes. Every girls new best friend.

And what are you hoping is wrapped under the tree for with your name on it?
I’m not a big one for receiving presents. I love giving gifts though. My highlights always involve time with friends and family and I couldn’t look forward to it more.
